Located on the southwestern coast of Sicily, Mazara del Vallo is the beating heart of red prawn fishing in the Mediterranean. From here, every night, fishing boats depart for the Sicily Channel, where the waters reach depths of over 700 meters.
It is in these abyssal depths that the red prawn finds its ideal habitat, feeding on plankton and small organisms that give its meat that unmistakable flavor, both sweet and mineral.
